I’m writing to you from the comfort of my own home once more. You are probably excited to hear about all the awesome adventures I’ve had since finishing exams. Well I’m sorry to disappoint, but my life as a free woman has been rather dull. Unless you find binge-watching ‘How I Met Your Mother,’ loafing around in pjs and baking muffins particularly thrilling. Disordered eating is no longer an uncommon issue in peoples lives. So many of us are confined and restricted by the rules we inflict on ourselves to reach society’s ridiculous standard of beauty. Unfortunately, the transition from disordered eater to recovery is not all smooth sailing. In fact, it can be frustrating, exhausting and degrading. However, the struggle is worth it, in order to emerge whole once more and to begin truly living!

This week has felt like the longest of my entire life. The completion of my final exam and therefore freshman year, saying far too many goodbyes and coming to terms with the fact I don’t have to do anything for 4 whole months! In amongst all that I had a character defining moment. You know, a situation you are forced into that defines who you are by the way you respond to it. I hope you like this post, it’s pretty close to my heart (and that’s not just because it’s about pancakes, promise.)

Have you ever found yourself pining for love? I’m not just talking about some meaningless fling or high school crush. I mean the real-deal. Someone who will cherish you, take delight in sharing your crazy dreams and holding you when you are falling apart. My best friend has recently entered a new relationship which is all mushy, with a smattering of butterflies and rainbows. To some people that makes them wanna hurl, but for me…well it sent me into a deep funk. I feel this irrepressible desire to love and be loved. I feel that there is something or rather someone missing in my life.

I’m the first to admit that I am a hopeless romantic. It’s pretty obvious considering that my favourite movie is Pride and Prejudice (and not just the inauthentic Hollywood version either…I’m talking the extended BBC classic one.) So you would think that having watched a few too many rom-coms I would be fully apt in dating and other such flirtatious shenanigans. Wrong. I’m not sure if it is my lack of a love-life, or my natural awkwardness that makes the whole dating scene a complete and utter nightmare….

Were you a pb&j kid? Unfortunately, I never knew the greatness of the peanut butter/jam combo until well into high school. Mum you really let me down. Although, I can’t really complain as I was that kid who had the best packed lunch. Like if it were a competition, I’d be the President and you’d be the loser. I had those squirty yoghurt tubes, jelly snakes, teddy biscuits and crackers…a nutritional goldmine (NOT!) but…no pb&j. So today I am well and truly making amends for that tragedy, with these incredible brownies.
