Exam season is upon us once more. I bet if you listen closely, you can hear the steam blowing out of students ears as they slump and scribble furiously over their books. Meanwhile, I am sitting here serenely sipping on a cup of tea. My fingernails are all intact, and I am not jittering down into a caffeine coma…wanna know my secret? Of course you do…

No it’s not muffins. We’ll get to those…

The secret to my stability of mind is… BALANCE!

That may sound stupidly simple and about as useful as a boat in a desert, but let me tell you it works.

Prioritize balance in all areas of your health. Let’s think about it in terms you may be more familiar with. It means going to bed early, instead of watching another episode of Criminal Minds. Waking up and pounding the pavement, then enjoying an afternoon spent lounging on the couch. Eating fresh fruit and salad but also indulging in brownies. Making time to laugh with friends as well as reading over your notes.

And this applies not only to frazzled students, but to anyone who is feeling a little worse for wear or stretched too thin.

My favourite quote is: “Life is a balance of holding on and letting go.” 

Hold on to the things that bring you joy, challenge you to grow and support you. Let go of negativity or things that are out of your control.

When you can learn to do this, you will find life less complicated, and far more enjoyable.

Now on a more serious note, it’s time for some muffins…

Sweet potato, spinach and feta muffins

Sweet potato, spinach and feta muffins:           –Makes 12

  • 2 cups wholemeal flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp baking soda
  • 1 cup torn spinach
  • 2 Tbsp parsley
  • 3 eggs, lightly beaten
  • 1/2 cup olive oil
  • 1/2 cup plain yoghurt
  • 1 cup cooked sweet potato
  • 100g feta

Start by mixing together the dry ingredients, and set aside. In a separate bowl, mix all of the wet ingredients (except the feta and sweet potato.) Add the wet mixture to the dry, and stir lightly. Then, add in the sweet potato chunks and torn spinach leaves. Place the mixture into greased muffin cases. Finally, crumble the feta on top of the muffins. Bake at 180C for 25-30 mins

[Note: They are best eaten warm. They do freeze well, and can easily be re-heated in the mircowave.]

Lastly, TRAGEDY struck our floor this week! Our fridge stopped working. Now we have to live like cavemen. My tea is milk-less, my carrots are hummus-less and on top of all that..I’ve run out of peanut butter! Alas, life is unfair…why does bad stuff always happen to good people?
