Food in a flash: Quesadillas

Hola friends!

So I’ve been home about 6 hours, and I haven’t left the kitchen yet. This is what happens people when you deprive a cook of her kitchen! But we are back in business, and I am chock full of inspiration to share with you. I’m kicking it off with an exceptionally awesome Mexican inspired recipe. So slap on a sombrero and let’s get to it.

This is one of my go-to lunches when I need food fast. It’s quick, easy and you’re gonna love it.

Quesadillas:              -Serves 2 amigos

  • 4 tortillas
  • 1 can red kidney beans, drained + rinsed
  • 1 can pureed tomatoes
  • 1 Tbsp tomato paste
  • 1 tsp sugar
  • 1/2 cup frozen corn
  • 1/2 onion, diced
  • 1 tsp crushed garlic
  • 1/2 cup grated cheese

First of all, fry your onion and garlic in a tablespoon of oil, till it softens nicely. Next add in the beans, corn, tomatoes and tomato paste. Let that bubble away until it becomes thick.

Spray one side of your tortilla with cooking oil and place it on the sandwich press. Scoop a decent amount of the bean mixture on top. Sprinkle on some cheese. Place the other tortilla on top and spray oil on it. Close the sandwich press and cook until the cheese has melted and the tortilla is crispy.

Plate up, and top with guacamole if that’s your jam. (I mixed together 1/2 an avocado, 1 small tomato, a dash of lemon juice, salt and pepper.)

Champions!

My friend Aimee and I participated in the fastest day in the world on Sunday, and it was epic. We have been training for 8 weeks to run our fastest mile, and on Sunday Nike put on an incredible event to see just how fast we could go. #sofast

We got some many goodies (who doesn’t love free stuff, am I right?) Unfortunately, in classic Auckland style it was pouring with rain. However, that didn’t slow us down. Both of us managed to whip out our speediest mile yet. They also fed us so well afterwards… I had the biggest food baby. Had me feeling like:

Speaking of food babies…If you follow me on Instagram you would have seen me raving about gelato. Not just any gelato though, this was the greatest thing that’s ever touched my lips. I’m practically salivating just thinking about it. It was hazelnut flavoured, and the little witches hat was solid chocolate.

So all in all it was a pretty fab weekend. Now I’m back home I’ve got to hit the textbooks hard. Hopefully you will be hearing from me again soon. (Presuming I don’t go crazy.)
