Lunch inspo

Hello friends!

You know how when you go to a restaurant and there is always that one person who takes forever to decide what to eat…then changes their mind three times?

Yeah…well that’s me. So I normally take the liberty of browsing the menu before going out. Unfortunately  the other day my dear mother told me the name of the wrong restaurant, and so all of my efforts were to no avail.

Today I’ve got a recipe which will hopefully give you some lunchtime inspiration, so you can avoid the I-don’t-know-what-to-have-for-lunch slump. I know that a lot of you find lunch the most boring and difficult meal…so I’m here to help.

This recipe is quick to make, tastes delicious and will make your colleagues and friends very jealous! It’s a win-win!

Sauteed sweet potato salad:                               – Serves 1

  • 1 small sweet potato
  • big handful of spinach
  • 1/4 carrot, grated
  • 4-5 button mushrooms
  • handful of kidney beans
  • 1/2 tsp crushed garlic
  • avocado
  • 1 Tbsp hummus

Firstly, poke several holes in the sweet potato then microwave for 4-8 minutes (you want it to be soft, not over-baked like a rock.)

Next chop mushrooms. Saute the mushrooms and sweet potato in garlic, then add beans and allow them to heat through. Add the hummus with a Tbsp of water. Stir until everything is nicely coated.

Now you can assemble your salad. Place spinach and carrot in the bowl. Place the sweet potato mixture into your bowl. Then add a bit of avo on top.

And lunch is served!

This recipe can be easily adapted…just sub in your favourite veges.
