Hello friends!
Today I have Peanut butter and cocoa bliss balls for you. (Hip hooray for bliss balls!) Just so you know, the definition of bliss is: ‘supreme happiness, utter joy or contentment.’ Need i say more?
I made this as a celebration. The celebration being, me re-gaining the ability to move, and not be repulsed by food anymore. You see I had a bit of a horrid week all and all. Firstly, it was the first week back from holidays which is always emotionally upsetting in itself. Except…I also happened to fall terribly ill on Thursday (I shall spare you the graphic, gory details!) and ended up too weak to move from the couch, or to stomach anything but dry cereal and apple juice. On the plus side, i rediscovered the brilliance of straws.
Anyway, 1 carton of juice, 4 days, and 20 hours of pointless t.v later, I bring you these delightful little gems which will rock your world.
The recipe makes roughly 22 balls (depending on how hungry you are when you roll them)
Here’s what you need:
- 1 Tbsp pumpkin seeds
- 3 Tbsp peanut butter
- 2 T cocoa (should be cacao if you are a proper superfoodie)
- 1 cup dates
- 2 cups almond meal
- 1 cup rolled oats
- 1 Tbsp honey (more if you aren’t very sweet)
- boiling water
I’m sure you know what pumpkin seeds look like but here you go…
This stuff is liquid gold (solid gold?, except gold is solid gold so…)
Add your cocoa
Next the oats and almond go in
Chop up your dates and add them with the honey to your mixture
Now you can blend like a boss… Add in water slowly till it comes together and no bit is left behind.
Now take teaspoonfuls and let them get their jiggle on in some chia seeds
(or try cocoa if you’re a rebel)
Then let them settle in the fridge to firm up
Serve them with a cuppa tea and a smile (or just some daisies if you’re grumpy)
